Triple Pork Sliders

 
 
 
Ingredients
  • 1 1/2 pounds ground pork
  • 1/2 pound fresh Mexican chorizo sausage, casings removed
  • 1/4 cup finely grated pepper jack cheese
  • 1 small shallot, finely chopped
  • 1 clove garlic, finely chopped
  • Kosher salt and freshly ground black pepper
  • 8 slices applewood smoked bacon, cooked crisp
  • 16 small dinner rolls, sliced in half
  • Curly leaf lettuce
  • 3 sliced plum tomatoes
Smoked Paprika Mayonnaise, recipe follows
  • Smoked Paprika Mayonnaise:
  • 1/4 cup mayonnaise
  • 1 tablespoon smoked paprika
  • 1 teaspoon hot sauce (recommended: Sriracha)

  • 1 16-oz. can garbanzo beans, rinsed and drained
  • 1/4 cup Hidden Valley Original Ranch Light dressing
  • 3 tablespoons warm water

  • 12 ounces boneless chicken breasts, cut into 1-inch pieces

Savory French Toast with Homemade Sausage Patties

Ingredients

  • 3 large eggs
  • 2/3 cup whole milk or cream
  • 1/2-2/3 cup grated Parmigiano Reggiano cheese (a couple of handfuls)
  • Freshly grated nutmeg
  • Salt and freshly ground black pepper
  • 1 1/2 pounds ground pork
  • 2 1/4 teaspoons ground sage or rubbed sage (half a palmful)
  • 2 1/4 teaspoons granulated onion
  • 1 1/2 teaspoons granulated garlic
  • 2 1/4 teaspoons fennel seed (half a palmful)
  • 3 pinches ground cloves or ground allspice
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 8 thick-cut slices good-quality white bread
  • 2 tablespoons butter
  • 2 cups strawberries, halved or sliced
  • 1/2 cup fresh basil leaves, thinly sliced or torn

  • 1/3 cup shredded Monterey Jack cheese with jalapeño peppers
  • 2 tablespoon vegetable oil
