Cheese Stuffed Jalapeño Peppers

Ingredients

  • 16 pickled jalapeño peppers, rinsed and drained
  • 2 4-ounce logs fresh goat cheese
  • 1 cup grated Jarlsberg cheese
  • 1/2 cup grated Manchego cheese*

Coffee Rubbed Flank Steak

1/3 cup finely ground dark roast coffee
1/3 cup dark chili powder
1/3 cup smoked paprika
½ cup kosher salt
2/3 cup packed dark brown sugar, plus 1 Tbsp

Apricot Glazed Grilled Chicken Wings

Ingredients




  • 4 pounds chicken wings, tips removed, and cut at the joint
  • 1 teaspoon kosher salt
  • 3/4 cup apricot preserves
  • 2 garlic cloves, mashed
  • 1 tablespoon chopped fresh ginger
  • 1/4 cup soy sauce
  • 1/2 teaspoon red pepper flakes
  • Juice from one lime, about 2 tablespoons
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon cumin
  • 2 tablespoons chopped chives
  • Fresh lime wedges for garnish

Individual Cheese & Herb Stratas

Ingredients

  • 8 thin slices prosciutto or deli ham
  • 2 cups French or Italian bread pieces (1-inch pieces)
  • 2 tablespoons melted butter
  • 1/2 cup crumbled goat cheese (see note)
  • 1/4 cup chopped fresh herbs (see note)
  • 8 Safest Choice Pasteurized Eggs
  • Salt
  • Coarse ground black pepper
  • Minced bell pepper (optional)
  • Chopped fresh herbs (optional)
Preparation
    1. Preheat oven to 400°F. Butter bottom and sides of four 10 to 12 ounce ramekins or spray with nonstick cooking spray
    2. Line each ramekin with 2 slices prosciutto or ham with some extending over sides.
    3. In large bowl, toss bread pieces and melted butter together. Stir in cheese and herbs. Divide mixture evenly among ramekins pressing down lightly. Break 2 eggs into each ramekin. Add salt and pepper, as desired. Sprinkle bell pepper around eggs, if desired.
    4. Place ramekins on rimmed baking sheet. Bake 25 to 30 minutes, until whites are set and yolks begin to firm, or to desired doneness.
    5. Garnish with additional herbs, if desired.

    Chicken Pozole

    Ingredients

    • 1 1/2 cups of chicken, shredded from a store bought (3- to 4-pound) rotisserie chicken
    • 3 tablespoons vegetable oil
    • 1 large yellow onion, chopped (about 2 cups)
    • 4 garlic cloves, minced
    • 1/4 teaspoon oregano
    • 3 teaspoons ground coriander

    Sloppy Joes no can required

    Ingredients


    • 1 pound of extra-lean ground beef or turkey
    • 1 onion, small diced
    • 2 cloves garlic, minced
    • 1 jalapeno, minced
    • 1 red pepper, small diced
    • 1 1/2 cup no-salt-added tomato sauce
    • 2 tablespoons tomato paste
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon molasses
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon mustard powder
    • 3/4 teaspoon Salt for Life Sea Salt Blend Black pepper, cracked
    • 8 whole-wheat hamburger buns


    Preparation
      1. Brown meat and onion in large sauté pan. Strain remaining fat and juices from pan. Add garlic, jalapeno and red pepper; cook about 5 minutes more. Stir in remaining ingredients. Reduce heat to simmer and cook 5 to 10 more minutes. Scoop 1/2-cup portion onto each bun and serve.
