Parsley-Rosemary Pesto


Ingredients

  • 1 cup packed Italian parsley
  • 1/3 cup packed fresh rosemary, stems removed
  • 3 cloves garlic
  • 1/2 cup walnuts
  • 1 ounce chunk Parmesan cheese (about 1/4 cup shredded)
  • 1/3 cup olive oil
  • Salt


Preparation
    1. Place all ingredients except oil and salt in bowl of food processor. Pulse until well combined. With processor running, slowly add oil in steady stream until well combined. Add salt as desired.

  • 3 tablespoons coarsely chopped mint leaves
  • 1 small garlic clove, finely chopped

  • Pinch red pepper flakes
  • 2 tilapia fillets (about 1 pound total), halved
  • Salt and freshly ground black pepper
  • 1 tablespoon extra virgin olive oil, plus 4 teaspoons oil for drizzling
