Tailgating recipes

Ingredients
  • 5 pounds spareribs, cut into 4-rib slabs
  • 1 tablespoon smoked sweet paprika
  • 1 tablespoon kosher salt
  • 2 teaspoons dried oregano
  • 2 teaspoons cumin, ground
  • 1 teaspoon ground chipotle chiles, or chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup honey, heated until liquid


Preparation
    1. Mix paprika, salt, oregano, cumin, chipotle or chili powder, garlic powder and onion powder together in small bowl. Sprinkle generously over both sides of ribs. Let stand at room temperature while preparing grill.
    2. Prepare outdoor grill for indirect medium-hot grilling. For a gas grill, remove cooking grates. Preheat grill on High. Turn 1 burner off. Place disposable aluminum foil pan over off burner and add 2 cups water to pan. Replace grates. Adjust heat to 350°F. For a charcoal grill, place disposable aluminum foil pan on 1 side of charcoal grate. Build fire on opposite side, and let burn until coals are coated with white ash. Spread coals in grill opposite pan and let burn 15 to 20 minutes. Add 2 cups water to pan. Position cooking grate in grill.
    3. Lightly oil cooking grate. Place ribs over foil pan and cover grill. Cook, adding water to pan as needed, until ribs are browned, fork-tender, and meat pulls away from end of bone, about 2 hours. (For charcoal grill, add 10 briquettes to fire every 45 minutes to maintain heat.) During last 20 minutes, occasionally brush both sides of ribs with warm honey.
    4. Let stand 5 minutes, cut into ribs, and serve hot.

Beer can chicken



It's one of my favorite ways to grill chicken.  You can find the rack to sit the can on at walmart for about 3 dollars. 
  • 1 whole chicken
  • can of beer or your favorite soda
  • 1tsp crushed red pepper
  • 1tsp of rosemary
  • BBQ rub(I have a recipe above or whatever you like)
Take the chicken and rub it with BBQ rub or any spice you like.  Take a can of beer or coke and empty about half of it. Put the crushed red pepper and rosemary in the can.  Heat grill to about 400.   So here's how it works.  Put the can in the rack on the grill and then sit the chicken on the can.  The chicken cooks with indirect heat of the grill and from the inside out.  It's tender moist and you get a delicious crunchy skin on the outside.

Smoked Turkey

Brine
  • 4 cups of tea(Lapsang Souchong optional)
  • 3/4 cups salt
  • 3/4 garlic salt or pepper
  • 3tbsp minced garlic
  • 3tbsp worchstershire sauce
  • 1/4 cup brown sugar
  •  2tsp red pepper flakes
  • water place all ingredients in a pot big enough to cover the turkey and refrigerate overnight

after the brine bath overnight drain the pot and turkey.  Depending on if you smoke or grill it keep the temperature between 250 to 300 degrees.  I would recomend a little hotter to begin with just for food safety concerns.  If you are grilling you can still get the smoked flavor either by using a smoker box for the wood chips or buy placing the woodchips in a foil package and putting holes in the top.  

My Bbq rub

  • 1/2 tbsp black pepper
  • 1tbsp cumin
  • 1tbsp brown sugar
  • 2tbsp garlic powder
  • 1tbsp chinese 5 spice(can find in most grocery stores)
  • 1 tbsp chili powder
  • Just rub into any meat and cook to your prefered temp. 
Kickin' Bacon Chicken bites  
  • 1 1/2 lb raw chicken cut into pieces
  • 1lb bacon
  • 1 bottle pickled, sliced jalepenos
  • fajita seasoning
Preheat oven to 375. Put a pepper slice on chicken piece and wrap in 1/3 slice of bacon. Secure with a tooth pick and place in a 9x13 baking dish. Repeat till dish is full. Sprinkle seasoning over bites.  Bake for an hour or until bacon is well done. Remove from dish and blot grease and serve. More on the cookbook.
