Enchiladas


 
  • 1  16 oz can of chicken or  comparable amount of chicken.
  • 1 jar of enchilada sauce
  • 6-7 tortillas 
  • 1 Package of shredded cheese
  • 1 can of black black beansCook the chicken in with the sauce on medium heat or in a crock pot all day.  When ready put chicken in the tortilla and fold them so the seem is on the bottom so they don't open up.  Pre-heat oven to 350.  Line up the tortillas in the baking dish. Cover with remaining tortilla sauce and black beans.  Heat for about 30 minutes and the last 10 minutes sprinkle cheese on top so it melts in.  Serve with sour cream if you like.  Really tasty and homemade!
