- left overs from a rotisserie chicken including carcass
- 1 can of creamed chicken soup
- 2 cups of rice
This was awesome because we made it with leftovers. I grilled a chicken(beer can chicken style but with a coke can you can check earlier recipe). So after you clean the meat of the chicken throw it into a stock pot with water make sure to cover most of the carcass with water. Bring to a boil then let it simmer for an hour. This will make the stock. Once that is done pull out the carcass and pull off any extra meat. Throw that in the pot with any other leftover chicken, vegetables, rice, and cream of chicken soup. With the rice you want to soak it in 2 cups of water so that the rice will already be wet so that it doesn't absorb your stock(tip from my mother-in-law. Let all the ingredients simmer for an hour and add seasoning to your liking. Very easy to make great soup.
